Well as I haven't been the driver along Bell's Line of Road yet...yet...I cannot really comment other than it looks good as a passenger.
More locally, the Commenara Parkway is a nice little piece of road. There is also a good fast road going north out of Bathurst (don't ask me more, that's all I can remember). But my favourite would have to be the Great Ocean Road in Victoria. Slow corners, fast corners, long straights, everything..and the speed limit is 100km/h most of the way so can't get booked for doing too much over the speed limit
Almost forgot, Wiseman's Ferry Road is very good too.
