I have seen adjustable seats in race saloons over the years but they "should" have a positive way of locking them (ie nuts n bolts) into place but they are not always picked up in scrutineering, however the time taken to adjust them officially would take too long and wouldn't be any good for a driver change in a two driver race. The bolster cushions for the shorter driver seem to be the only legal way.
Personally I don't see why a seat on decent designed sliding runners isn't allowed in car races, track days seem to use anything and it's the belts that hold you in after all !
